چکیده
The objective of this research was to evaluate the physicochemical characteristics Amaranthus spp. commonly happening in Brazil, besides defining efficiency different extraction processes phenolic compounds and antioxidant activity. Five species genus (A. spinosus, A. viridis, retroflexus, hybridus var. paniculatus e deflexus) were evaluated regard their such as vitamin C, soluble solids, pH, moisture, lipids protein levels well coloration leaves. Also, antioxidants defined through four (reflux; hydroalcoholic turbo-extraction; aqueous; methanolic). spinosus has stood out for its C levels, pH indicating potential when compared others. leaf extracts five present differences total phenol flavonoids hydro subject methods. activities favored by reflux turbo-extraction, with viridis standing methods hydroalcoholic.
